Co "B", 49th Alabama Regt was raised in DeKalb County. The other man served in Co. "B", 12th Alabama Regt, raised in Coosa County. While I cannot locate the second man on the census, your research definitely connects Joel Coffee with DeKalb. There is no record of death, but there is a record of discharge due to asthma.

For what it's worth, this regiment was known as the 31st Alabama during much of 1862. In November of 1862 the War Department recognized a conflict due to another regiment from Alabama having this designation. Afterwards it was designated 49th Alabama Regt.
