Hunting in 1860

Another quick question from me today -- my ancestors were from Wilcox and Monroe county areas. Does anyone know what they would have hunted during Christmas time in 1860? Seems to me I heard deer was not hunted in the state until more recent times, so I am curious what they would have hunted -- turkey, hogs, other game, deer? All of it? Obviously they did not have the hunting laws we do now but i need to verify deer hunting would have been a common event for them. Thank you
