Although I don't think this has anything to do with the Z on your Enfield, Z was the code letter that indicated the London Armoury Co. Ltd. in British government inspectors' markings (E=Enfield, B=Birmingham, Z=LAC, A=America (Robbins & Lawrence, Windsor), L=Liege (Belgium), etc.).

I would guess that the Z on your gun was a marking of an inspector of the company that assembled and marketed the gun (the "gunmaker"). If you take the gun apart - take out the lock and barrel - you will likely find the names or initials of the overall gunmaker and/or the parts makers, on the backsides/undersides of these parts. You may also find more Zs. Also, look closely along the bottom of the stock, about 4-5 inches behind the triggerguard - the name of the gunmaker was usually stamped there on Birmingham Enfields.
