I cannot respond to the food issue but I can say something about horseshodding. Every cavalry unit either had a traveling forge or camped near one, either infantry or artillery. They all needed to repair wagons and shod horses. Blacksmith traveled with the forge which consisted of a bellows box (containing a bellows) and a forge at the rear of the bellows box. A removeable coal box was at the other end of the Bellows box. Tools were carried in an associated limber. Here is a portion of a Library of Congress picture which I have labeled.
