"Fred Joyce" was a nom de plume for John Henry Weller of Louisville, KY, who was a Captain in the 4th Kentucky Infantry CSA. Because John Weller was one of the founders and major contributors to the "Bivouac," he apparently felt that it would be better not to have his own name on so many of the articles that he wrote, hence "Fred Joyce." I have never found any reference that indicated WHY he chose "Fred Joyce."
