Ager Cake a gelatin filled pastry, sometimes used as a reference to liver or spleen abcess asociated with malaria. In the reference above I suspect it refers to the solvenly way "fat" men appeared and "bounced" in the saddle. Its a jab at the lack of proper hoarsemanship I think.
