Bryce, you know more about what occurred on Price's return to Missouri in 1864 than most but weren't there several examples of dismounted troops fighting around Kansas City. Sinisi, Last Hurrah, p 199 describes Jennison's 15th Kansas Cavalry fighting dismounted at the Little Blue and a mounted section of the 2nd Kansas militia dismounted at Mockbee Farm (Sinisi, pp 204-205) and fought for a while behind a stone wall. There may be other examples.

At Centralia, Major Johnson's unfortunate troops fought dismounted but in the open and were annihilated by the guerrillas, but they were mounted infantry (39th Missouri Infantry) not cavalry.

Of course, the best example of cavalry fighting dismounted was at Nashville, Dec 15 and 16, 1864, particularly Hatch's division of Wilson's corps (which included one Missouri regiment, the 12th Cavalry), and that is nicely described in Dennis Belcher's new book The Cavalries in the Nashville Campaign.
