Here's a problem with the "really there, just not on roll" assumption. Rations were issued on the basis of numbers from the rolls. Men who were on roll couldn't share rations with men who were, because there wasn't enough to feed those present for duty.
The "really there, just not on roll" assumption also assumes that these men brought sandwiches from home.
