The Tennessee State Library and Archives holds a huge collection of items from Tennessee Civil War soldiers. These include microfilm accounts, diaries, letter collections and more. Their finding aid can be found online and, although somewhat out of date, will get you well into the ballpark.

The Civil War guy there is Myers Brown and he is an outstanding historian and a fine guy to boot.
