I found two Gabriel Jones 1860 Georgia Census:

Gabriel .P. Jones (about 1832) Residence:Campbell, Ga.
Gabriel Jones (age: 25) Residence: Atlanta,Ga. "penitentiary for life for murder"
* I think we can rule out the 2nd man.
