I found Joseph as a private in Company K, 17th Texas Cavalry Consolidated as you said. Also, I found William in Company G, 20th Texas Infantry. I checked the State Pension list and found one for William S. Grimes, Harrison Co. TX.

Your best bet would be to get the service records of the men. You can do that at this site, they do a great job and are very fast.
