I did not know the answer so I asked one of my co-workers and here is the answer:

“The Texas Civil War Centennial Commission & the Texas State Historical Survey Committee (predecessor of the Texas Historical Commission) choose the color of the granite to resemble that of the Texas State Capitol and constructed the monuments of Texas Red Granite adorned with the lone star of Texas and wreath placed near the top. This simple monument appears plain when compared with the other southern state monuments, but the fact that identical monuments exist on other fields serves to assure that the sacrifice of Texas soldiers on one battlefield was not made to appear any greater or less on any specific field.”
