The one I'm familiar with is A Creek Warrior for the Confederacy which is an autobiography of G.W. Grayson edited by Baird. It's more about his personal experience that a military history but very interesting read. He enlisted after the campaign against Opothleyahola. The Creek were not generally engaged at Honey Springs. He does describe in detail the capture of the steamer J.R. Williams and the 2nd Battle of Cabin Creek.
